Recipe : Sticky Date Pudding

Hello Saturday and Salam everyone.

Remember my post complaining on leftovers dates? Well, I've succeeded, berjaya juga, making something out with the leftover dates.

Recipe are from

Sticky Date Pudding by Anis Nabilah

1. Place dates and water in a small saucepan over high heat. When the mixture starts to boil, add bicarbonate of soda and 60g butter, and remove from the heat. Stir and then set aside for 25 minutes.

2. Preheat oven to 180 degrees Celsius (160 degrees Celsius fan-forced). If you are not using a fan-forced oven, adjust the oven rack to the lower half of the oven so the top of the pudding will be in the centre of the oven.

3. Grease a 20cm diameter (top inside measurement) round springform pan and line the base and side with baking paper. 
(Instead of baking paper I spread some of butter, maybe a bit too much.)

4. Place cooled date mixture in a food processor. Pulse mixture a few times to form a chunky paste.

5. Add eggs and vanilla to date mixture and pulse a couple of times until just combined.

6. Stir flour and 150g (2/3 cup, firmly packed) brown sugar together in a medium bowl. (I reduce the amount of brown sugar, as I use sweetened dates) Use the back of the spoon to break up any lumps of brown sugar. Add date mixture to the flour mixture and gently fold the ingredients together until just combined. 

7. Pour batter into prepared pan. If, when baking, the pudding starts to overbrown, loosely cover it with greaseproof paper.

8. Bake the pudding for about 50-60 minutes (about 20-30 minutes if baking in muffin tins), or until it springs back when lightly pressed in the centre. A thin-bladed knife or wooden skewer inserted into the centre of the pudding should come out without any batter attached. (mine has crack at the middle, might be cause by overheating)

9. For butterscotch sauce, place sugar and butter in saucepan over medium heat. Stir well until the sugar melted. (my tips, be sure the sugar turns brown. as I don't, the sauce got too sweet)

10. Add evaporated milk and let it simmer. Then add a spoon of cornflour, which was added with water earlier. Stir well until the sauce thickens and ready to serve :)

Assalammualaikum and happy weekend :)

This should be under why wednesday section. but..I've always confused Wednesday with Tuesday or Thursday. True story. Movie on TV at 10 o'clock makes me realize it Wednesday. too late :/ 

Do you ever wonder how Bahasa Melayu got its peribahasa, simpulan bahasa, penjodoh bilangan and everything? Even the word simpulan bahasa makes me smile. It's like how would you tie a language. I bet it is with you tongue. 

This time I wonder if this makes sense?

Tying the knot

Assalammualaikum w.b.t.. Salam Jumaat and happy Friday..

Remember the day I've posted things about wedding? Berangan kan.. Wanted a DIY wedding.. a night wedding... now I've been thinking of garden wedding and traditional-like wedding..


Guess what, I'll get married in..*counting* ok, it's 6 months from now..shall I be panic? Yes.

I've never thought that he would come this soon for merisik, something like asking my parents permission for us to get married. I was totally surprised. and happy at the same time. Nothing could explain my feeling at that time.

So, I guess this is official.

Flowers and Names

Assalammualaikum and Happy Merdeka.. 

This is random. Thinking about girls' name and how they got their names. 

There are phase or trend in giving name to newborn kan... From what my mom had said, my name was from the trend of 'nor', 'nur', 'noor', or 'nurul'. Same goes to all of her daughter.. There are trend of 'siti', follows with modern names like 'natasha' or 'daniel' for the boy and now, I've seen some really exotic name from arabic words like 'talhah', 'razan'.. Malays are really rich in culture. We are molded by surrounding environment I suppose.  

So lately, I've been watching a lot of old/classic movies and amazed with their names. Kuntum, Melor, Kundur, Tanjung .. Names that are not so in the trend nowadays..

Imagine if I would name my daughter...
Okay, 'kantan' wasn't bad kan?
"Kantan! Wake up, breakfast ready" hahaha..

and no, I'm not pregnant. hehe...
